Choosing and installing NICs shouldnt cause problems. Were using Farallons PCI FastEtherTX-10/100 cards (www.farallon.com). You need to make sure the cards have the correct physical connectors (RJ-45 for 10/100BaseTX and BNC for 10Base2). Installation is no different from any other expansion card, and with a modern PnP PCI card you shouldnt have any resource conflict problems. Since Ethernet is so well defined (the official specification standard is IEEE 802.3) you shouldnt have problems with conflicting manufacturers, and they dont need any configuring: just plug them in and theyll go.
